I don't think there is a way to track Switch, I don't even think Switch has GPS built in to track. I guess it might be possible to track it, if it ever connects to the internet. But even then, it would probably require police to issue warrant for tracking, though it might depend on Nintendo cooperating. Only thin you can do is to change password for Nintendo account, so whoever took it can't use your account.

Say to your friends that they should contact him when he is using your account. Maybe make a deal or something. Also it should be possible to track someone's ip address but how that works is a mystery to me.
